Mechanical Characteristics
1. Dough Sheeting: Features a three-stage roller system driven by a servo motor for automatic sheeting. The process transitions from thick to thin, mimicking traditional hand-rolling techniques to produce wrappers that are highly resilient and have a satisfyingly chewy texture.
2. Flour Dusting: An automatic dusting mechanism reduces stickiness, thereby minimizing the rate of product breakage.
3. Cutting: An automated cutting unit—equipped with a safety guard—cuts the dough sheets with precise positioning, ensuring a high yield and producing edges that are clean and free of burrs.
4. Scrap Recovery: After cutting, any leftover dough scraps are channeled directly back to the dough hopper via a dedicated recovery mechanism. This maximizes dough utilization and allows for a second round of sheeting, resulting in an even better texture.
5. Filling Injection: A piston-driven servo motor automatically injects the filling with precise volume control. The internal cylinder features an integrated cutter that performs the operation in a single step, effectively preventing the issue of filling becoming trapped along the wrapper edges.
6. Wrapping: A servo motor simulates the motions of hand-wrapping; the wrapping force is adjustable, ensuring a tight seal that prevents any filling from leaking out.
7. Forming: A servo motor gently shakes the *Shaomai* to ensure the filling is evenly distributed and the shape is full and uniform, resulting in a beautifully formed final product.
