Dough Making Tips

(1)A、Take 1 kg flour as an example

High protein flour 925g, gluten(wheat protein), water275g.

(flour:gluten:water=925:75:275)

B、Put the high protein flour and gluten into a mixer, turn the mixer running on slow speed while pouring the water into it slowly. Keep the mixer running on slow speed for about 2 minutes, then about 8minutes on medium speed till the dough looks flocculent or powdery, then wait about 5 minutes to use the dough.  

 (2)A、Take 1 kg flour as an example

 High protein flour 1kg, water 260g、salt 2g

(flour:water:salt=1000:260:2)

B、Put the high protein flour into a mixer first, blend the salt with the water evenly, pour it into the mixer slowly. Turn the mixer running on medium speed for 15~20minutes till the water blended with the flour completely, then wait 5~10minutes to use the dough.

(3) The above dough-making method and formula follows that popular in Taiwan, adjust properly considering local factors such as flour, climate and humidity.
